Italian Beef

Jeannie Sanchez
1, 3-4 pound beef roast
1 package DRY Italian salad dressing mix..(Like Good Seasons)
8 oz. pepperoncini peppers, juice
1 can beer OR beef broth

Put all in the crock pot. Cook on high for 6-8 hours. If it hasn’t fallen apart, pull apart with two forks. Discard the pepper stems, but keep the peppers in! Serve on buns with some juice for dipping. (This smells SO good while it cooks, you will drive everyone crazy waiting for dinner!)

4. seasoning of your choice
Cover and cook on low while you quilt, shop, etc. It’s great with mashed potatoes or noodles and a veggie. Everyone that’s tried it, loves it.

Italian Crock Pot Meal

Sheryl says, “I have 2 quick things I do for dinner.”

The first one is: In a Crock Pot put as many boneless skinless chicken breasts as needed for your family. Dump a can of diced or stewed Italian tomatoes and a small can of tomato sauce.

The second is basically the same only I use a large charcoal steak and the tomatoes.

Let them cook in the crock pot/slow cooker on low all day and then serve over pasta with a salad or vegetable. Quick and easy and my family loves it. To spice it up, you could use a different flavor of the diced or stewed tomatoes.

1 rump roast
1 pkg. Lipton Dry Onion Soup Mix
1 can Cream of Mushroom Soup

Place all ingredients into a crock-pot. Cook all day on low heat.

1 lb. ground beef
1 onion, diced
1 can Spanish rice
1 can stewed tomatoes
1 small can tomato sauce
1 package dry taco seasoning
shredded Cheddar cheese
shredded lettuce
taco chips

Cook and crumble ground beef along with onion, drain. Put meat, rice, tomatoes, tomato sauce, and taco seasoning into a crock pot and cook on low until you are ready to serve. Break up taco chips onto plate, spoon taco mixture over the chips, add the cheese and lettuce, and serve. So easy and good!

This recipe can be doubled, if you need to.

Crock Pot Stroganoff

2 lbs. uncooked stew meat
1 envelope onion soup mix
1 can mushrooms with liquid- optional, small or large depending on your family’s preference
1 lg. can cream of mushroom soup
1 sm. can cream of celery soup
1/2 c. red wine
4 oz. sour cream ADD JUST BEFORE SERVING
Rice or egg noodles
Parsely garnish

Sometime before lunchtime, layer the celery soup, meat, dry onion soup mix, wine, mushrooms, and mushroom soup into a large crock pot on high heat setting. When you come back to the kitchen about an hour or so later for fresh coffee, stir the contents and turn the heat down to medium for the rest of the afternoon.

Half an hour before serving, fix enough wide egg noodles or rice for your family. While that cooks, turn the pot off, add the sour cream and stir well, and leave the lid off the crock pot to cool and thicken the sauce slightly. Spoon the meat & gravy over the noodles/rice and enjoy the fabulous rich flavor. This can easily be done early in the morning before leaving the house, but don’t forget to turn the heat down as you walk out the door! Mid-day stirring is not absolutely required.

Easy Slow Cooker Meal

6-8 cubed steaks or tenderized beef pieces
1 jar (26 oz.) your favorite spaghetti sauce

Layer meat in the bottom of the cooker -season with your favorite seasonings on each layer - salt, pepper, garlic powder/salt , onion powder/salt. Pour spaghetti sauce on top and cook on slow 8 hours or high for 3-4 hours. Serve on a bed of rice with a salad and warm bread. This is a favorite recipe of my sons and they ask for it when they come home.

Sweet and Sour Meatballs

All you have to do is think about the crockpot in the morning and you will have a great dinner!

1/2 pkg. frozen meatballs (I usually do a 1/2 bag for home & a full bag for potlucks)
1 small bottle ketchup
1 20 oz bottle 7-Up (or any lemon-lime soda)

Pour meatballs in crock-pot, add ketchup (yes entire bottle) and 7-Up. Turn on low and forget it. At dinner time, cook a pot of rice, and serve meatballs over! I know this sounds crazy, but try it once. I have never had anyone not like it!

Crock Pot Oatmeal

2 cups milk
1/4 c. brown sugar
1 Tbsp.melted butter
1/4 tsp salt
1/2 tsp cinnamon
1 cup rolled oats (NOT instant or 1 minute)
1 c. chopped apple
1/2 c. raisins
1/2 c. chopped walnuts (optional)

Mix everything in the crockpot right before you go to bed. Turn on LOW. When you get up in the morning it will be ready to eat.

5 Hour Chicken Stew (low fat)

3 cans chicken broth (Do not add additional water.)
3 cans stewed tomatoes
1 cup white wine
1 tablespoon sugar
3/4 teaspoon pepper
1 tablespoon (or less) salt
7 large potatoes (peeled and diced bite size)
5 carrots, peeled (peeled and diced bite size)
3 onions, peeled (peeled and diced bite size)
garlic
2 stalks celery (peeled and diced bite size)
3 raw chicken breast halves without skin, (diced bite size)

Mix all together in crock pot or in large casserole for the oven. Bake 5 hours in oven or until tender in crock pot. Add water, additional chicken broth, or tomato juice/ketchup to increase amount of liquid or to adjust flavor. Tastes good served with cornbread. Julie Bullard, 2001
