2 cans corn, drained
Butter squares throughout
Crushed crackers
Salt and Pepper
Milk to cover
Put all ingredients in a buttered dish bake for approximately 30 to 45 minutes at 350 degrees F.
I serve with salmon patties and a salad.

3 cups shredded zucchini
1 cup cheddar cheese
1 cup shredded carrots
1/2 cup chopped onion
Fresh parsley to taste
Salt and pepper to taste
1/2 cup olive oil
3 eggs
Mix together and bake in a greased casserole or pie dish at 350ยบ for as long as it takes to puff up and brown nicely.
Serve with a nice salad and fresh fruit. Enjoy!

1 lb. fresh, frozen, or canned green beans
1/4 c. vinegar
1/4 c. vegetable oil
1/4 c. sugar
1 tsp. ground pepper
1 1/2 tsp. garlic salt
1 1/2 tsp. leaf oregano
If using fresh green beans, cook until still crisp. Combine all ingredients in bowl and marinate in refrigerator several hours or overnight before serving.

1 lb green beans cooked until just tender then drained
2 Tbsp soy sauce
1 tsp corn starch
1 tsp brown sugar
1 tsp sesame oil
1/4 tsp red pepper flakes
1/4 tsp ginger
2 tsp peanut oil
1 tsp garlic
Combine ingredients and cook to thicken slighly. Stir into cooked beans.

6 medium unpeeled potatoes, baked
1/4 tsp salt
1/4 tsp pepper
1 lb sliced bacon, cooked and crumbled
3 cups (24 ozs) sour cream
2 cups (8 ozs) shredded mozzarella cheese
2 cups (8 ozs) shredded cheddar cheese
2 green onions
Cut potatoes into cubes, Place half into greased casserole. Sprinkle with half salt, pepper and bacon. Top with half sour cream and cheeses. Repeat layers. Bake uncovered in 350* oven for 20 minutes or until cheese is melted. Sprinkle with onions and serve. Yields 6-8 servings.
This is a great pot luck dish and goes together in a snap after the potatoes are baked.

2 eggs well beaten
1 stick butter or margarine, melted
3/4 cup mayo
1 can cream mushroom soup
8 oz. cheddar cheese, grated
2 T. chopped onion
2 pkgs. (or 20 oz.) frozen chopped broccoli–thaw until it breaks apart.
Mix all ingredients together. Top with crushed Ritz Crackers. You can make this ahead, but don’t top with the crackers until just before baking. Bake at 350 degrees for 1 hour. Easy!
I served this multiple times over the holidays and everybody loved it–even those who confessed to not liking broccoli very well.

3 cans cream style corn
6 eggs
3 cups rice krispies
Beat eggs slightly and add to corn. Fold in rice krispies. Place in a buttered 9×13 pan and dot with 1 stick margarine. Bake at 350 for 1 hour or until set.
Batch can be made smaller. This is a good one for potlucks. It comes out tasting sweeter and with a wonderful crisp top!

1 pkg. Lipton Beefy Onion Soup Mix
1 stick margarine
1jar sliced mushrooms
4 medium potatoes peeled and quartered
You can cook this recipe in the oven, but to save time when I have been sewing I use the microwave. Arrange the potatoes in a microwavable dish. Melt the margarine in a saucepan and stir in the soup mix, stir until blended. Add the mushrooms and stir. Pour the soup mixture over the potatoes and stir to coat the potatoes. Cover and microwave for 20 - 30 minutes at full power or until potatoes are tender. If you choose to cook in oven…… put in a oven safe dish and cook at 350 degrees 45 - 60 minutes or until the potatoes are tender.

3/4 cup crushed gingersnaps
2 tablespoons onion, chopped
1/4 cup brown sugar or syrup
2-4 strips bacon, fried crisp and crumbled
2 cans (16 oz. each) pork & beans
1/4 cup ketchup
Mix all ingredients. Put in a greased 1-1/2 qt. casserole. Bake at 375 degrees for 30 minutes

3 cucumbers peeled and sliced
1 med. onion sliced
1 cup Miracle Whip or salad dressing
1 cup sour cream
1 Tbsp. sugar
Black pepper to taste
Peel and slice cucumbers, place in a colander. Salt the cucumbers to remove excess moisture. Let stand 30 minutes to drain. Rinse with cold water. Blot dry with paper towels. Add to onions. Mix together the sour cream, Miracle Whip or salad dressing and sugar. Pour over the cucumbers and onions. Season to taste. Chill 1 hour, enjoy.
